Sugar Maple

This is the tree that lights up forests in Canada and the US. With the Great Barrier Reef almost destroyed by fertiliser run off from sugar cane crops, it's time to grow our own maple sugar and bring carbon back to earth. The Sugar Maple is the primary source of 'true' maple syrup. Starches stored within the trunk over winter are converted to the highly prized sugary syrup, which is harvested in spring using a tap or spout inserted directly into the trunk. Its timber is also preferred in the manufacture of violins, skateboards and pool cues! With sensational autumn foliage, the large lobed leaves of Sugar Maple turn spectacular shades of gold and copper, with tones enhanced in cool, clear climates. Medium growth rate.
