A jewel in the potato garden, this spectacular purple potato with white marbling, has an excellent starch content and variable uses. The colourful flesh is hidden beneath an almost golden patinaed skin. Maintaining its colour when cooked, 'Sapphire' is great for mash, gnocchi, chips and a colourful potato salad. Flesh can look a little grey when mashed due to the combination of purple and white, but is no less spectacular in a bowl or on a plate. The medium-sized oval tubers are high in antioxidants and big on visual appeal. Stores up to 3 months. Indeterminate; harvest in 90-120 days. *Potatoes are also prohibited from being brought into Kangaroo Island due to quarantine restrictions.

Seed Potato 'Sapphire'

Purple potatoes originated in South America. High in anthocyanins (which are powerful antioxidants), these relatives of the wild potatoes of the Andes are popular in salads and as thinly sliced chips (crisps) where the marbling is shown to great effect. With a nutty, earthy flavour, this colourful potato showcases the diversity of this ancient vegie crop.
How to grow

All potatoes can be grown in the soil, in towers and grow bags. In the case of indeterminate potatoes, they produce their crop along their growing stem, just like tomatoes; the only difference is that tomatoes grow above the soil, fruiting along the exposed stem upward; while potatoes crop below the soil, so the stem must be continually covered up in order to produce viable tubers. These are often your most prolific, late harvest varieties needing around 90-120 days to reach maturity.
