Ingredients
- 1 bunch of 5 coloured silverbeet
- 1 brown onion
- 1 clove garlic
- 150g feta cheese (or goat’s cheese)
- Basil leaves
- 1 packet filo pastry
- 150g butter
- Olive oil
- Nutmeg
- Salt and pepper
Method
- De-stem the silverbeet and wash thoroughly.
- Dice garlic and onion and sauté in olive oil until golden.
- Thinly slice the stems and add to the onions and continue cooking – not too long to retain the delightful colours!
- Add the sliced leaves and toss in the pan until just wilted.
- Move to a bowl and add the crumbled feta, basil leaves, salt and pepper to taste and a pinch of nutmeg.
- Melt the butter and with a pastry brush, layer 4 sheets of filo, lightly brushing butter on each layer.
- Place silverbeet mixture into the centre and front of the filo (leaving space on the ends to fold in).
- Roll filo, encasing the mixture and paint with butter.
- Bake in an 180°C oven until golden (about 10 minutes).
