Traditionally made with fermented tabasco chillies, this non-fermented version is just as tasty in a fraction of the time.
Ingredients
- 140g Tabasco Chilli (deseeded and roughly chopped)
- 1 cup white wine vinegar
- Pinch of salt
Method
- Add all ingredients into a small saucepan and bring to the boil. Be sure to turn on the rangehood to vent the fumes.
- Turn the heat down and allow mixture to simmer for 20 minutes.
- Turn off and allow to cool.
- Place all ingredients in a blender or food processor and blend to a smooth consistency.
- Taste and add pure water, vinegar, salt and/or salt to taste.
- Strain and bottle in a sterilised jar.
- Store in the fridge.
